Roasted Chicken

A dish that is so, SO easy and definitely one to impress your hubby and family is a tasty roasted chicken. I made one the other night and it took me literally 10 minutes to prepare, Brian was so impressed he requested we have one every week!


This is what you need:

1 whole roasting chicken
A sprig of fresh rosemary would be nice, but if you don't have time to go to the store for that, dried will do
olive oil OR butter
1 lemon sliced in half
salt & pepper

This is what you do:

Take out your chicken and wash it down with water. This is so gross to me, handling a whole chicken makes it so much more of a "once alive" thing but I deal...
Rub it down with lots of olive oil or butter (I do olive oil because it's healthier?).
Salt and pepper that baby up and don't be shy!
Put your sprig of rosemary along with both lemon halves in the cavity, again gross, but deal.

You can cut up some potatoes to put around the chicken and make the meal all at once. 

Bake at 450 for about one hour, or until the internal temperature is about 180-190. To be honest, the internal temperature measurement never really works for me so I normally cut into the bird to make sure the juices run clear and it looks cooked. 


Serve with a little salad and your favorite wine and enjoy!!
