The BEST Cauliflower "Mashed Potato" Recipe

Over the past few weeks I've really made an effort to get more fruits and vegetables into our daily diets. I've made some simple changes to our usual side dishes and the new versions leave us so satisfied that we swear we'll never go back.

One side dish that I loved to make were mashed potatoes. They are so satisfying and savory and go so well with certain meals like roasted chicken and meatloaf, it's hard to imagine a vegetable replacement. Enter cauliflower. I promise you will not miss the butter and potato after trying this lightened up veggie packed version.


Instead of buying a bag of potatoes, buy a head of cauliflower. With a knife take off all the heads, you can leave the stems on. This sounds like it might take some time but really, the heads all kind of fall apart as you're cutting them off the base. Boil them in water until they are soft enough to put a fork through with little effort. 

In a food processor or blender, place your boiled cauliflower, a few heaping tablespoons of plain greek yogurt, a teaspoon of crushed garlic, freshly grated parmesan cheese (about a half a cup), and salt & pepper to taste. Blend it up until it reaches your desired consistency and you're done! 

They are so yummy and have basically no fat except for the parmesan cheese, you MUST try!

  1. creamed cauliflower is a fav in our house. what i do is cook as you suggest and then take a few heads and pop into my magic bullet or food processor and mix until it's a cream. toss it with the remaining flowerets...season to taste with s&p and no one will no the difference!
