THE BEST THING I'VE LEARNED ON PINTEREST :: CLEANING

A friend just told me about a cleaning trick she learned on Pinterest and it is so great I am actually writing a blog post on it.<br /> <br /> We had a dinner party on Friday night and I cooked a pork loin stuffed with apricots and prunes. Part of the recipe called for rubbing apricot preserve all over the loin (it was sooooo good, recipe to come for sure). Anyway, as delicious as it was it made such a mess of the pan because all the fat from the pork and sugars from the fruit dripped and hardened on the pan from baking which left <i>such</i> a mess. I was about to throw away the pan because the grease was so hard.<br /> <br /> Enter dryer sheet.<br /> <br /> When you're cleaning up from Christmas dinner, fill your greasiest pan with soap and water and pop a dryer sheet in. Leave it overnight and like magic, the grease comes completely off the pan! Winter at the Ocean House

<div dir="ltr" style="text-align: left;" trbidi="on"> For my birthday this year, Brian swept me away for a weekend at the Ocean House in Watch Hill, Rhode Island. It is such a beautiful and special place for us, as it was on the balcony of room 203 where we got engaged back in 2010. He reserved room 203 for our most recent trip and the whole 24 or hours or so that we spent there was heavenly. My parents watched Mister so we weren't worried about him at all and could enjoy our time, just the two of us :)<br /> <br /> I can't say enough about the Ocean House. It's the creme de la creme of New England and pristinely historical from it's recent restoration. As you enter the lobby you are immediately embraced by the warm staff and taken aback by it's coastal charm. You're offered a glass of champagne and are escorted to your room where you'll think you're in heaven for the rest of your stay.<br /> <br /> Once you step outside and look at the ocean, you're completely at peace. There is something so special about the ocean in the winter. It's so quiet so you can hear every little wave and the sky is so crisp and clear. A Beautiful Thanksgiving

Pomegranate Obsession

I know they are the "superfood" of about five years ago but I never actually bought a whole one until this past weekend after seeing one in a friend's instagram.<br /> <div> <br /></div> <div> The pomegranate (punica granatum) is an original native fruit of Persia (who else is obsessed with Shahs of Sunset by the way!?).  It is nutrient dense and very high in antioxidants and has been revered as a symbol of health, fertility and eternal life by our Persian friends :)<br /> <br /> The easiest way to eat this fruit is by splitting it in half, breaking off chunks and popping the seeds out <i>under water. </i>The seeds fall to the bottom of the bowl and the pulp rises to the top. What you're left with is a whole lotta delicious seeds and a yummy pomegranate juice to sip on! The Happiness Project

<div dir="ltr" style="text-align: left;" trbidi="on"> Mister is in his bouncy seat which usually gets me about ten minutes so this will be quick. I know I'm super late to this book but a friend just gave it to me and I'm really into it! Reading, just like getting out this blog post, with a baby is pretty close to impossible as all my free time seems to be pushed to days end, and by that time my eyes close and head hits the pillow, done. I do miss reading and recently discovered the magic of audio books! I now "read" on the go during my daily walks with our dog Jack and Brian in his stroller.  I've been walking a lot lately but found by the 30 minute mark I was dreadfully bored but not anymore! I love my walks and look forward to getting out the door to "read on".<br /> <br /> Onto the book:<br /> <br /> For the first time in my life I can say I feel completely whole. I have everything I could ever want or need and am grateful every single day, I wish I could freeze time, it's pretty amazing. The Happiness Project is proving to be a great read regardless of where you are in your life. If you're in a slump, it can certainly steer you to leading a happier existence and brighter days by trying out your own happiness project, and if you're feeling completely happy, it's teachings are great tool to have in your back pocket for when times get tough. I never bought dried beans before, I've always used the can and what a difference it makes. Unless I'm in a crunch, I am a dry bean all the way now. Let them get nice and juicy so you get a little sauce. Add your bean mixture and stir. Good Morning, Lovelies! One of the best things happened yesterday, I bought a box of wine that was actually delicious!! My cousin told me about this magical Black Box and said she had heard it was a pretty decent wine, for a box. I met both girls in Florence, Italy during our study abroad year in college, nine years ago *scary*. text-align: center;"> <br /></div> <div class="" style="clear: both; text-align: center;"> Sorry for the blurry pic, as you can see Brian's hand was involved.</div> <div class="" style="clear: both; text-align: center;"> <b><u><br /></u></b></div> <b><u>Creamy Cauliflower Mac:</u></b><br /> <br /> Makes: 4 servings<br /> Time: About 45 minutes<br /> (Recipe from <a href="http://content.markbittman.com/node/174">The Food Matters Cookbook</a>)<br /> <br /> 2 tablespoons olive oil, plus more for greasing the baking dish<br /> Salt<br /> 2 1⁄2 cups vegetable or chicken stock or water<br /> 2 bay leaves<br /> 1 cauliflower, cored and separated into large pieces<br /> 8 ounces elbow, shell, ziti, or other cut pasta, preferably whole wheat<br /> 1 ⁄2 cup grated cheese (like sharp cheddar, Gruyère, or Emmental or a combination)<br /> 1 tablespoon Dijon mustard, or to taste<br /> 1 ⁄8 teaspoon nutmeg, or to taste<br /> Black pepper<br /> 1 ⁄4 cup grated Parmesan cheese<br /> 1 ⁄2 cup or more bread crumbs, optional<br /> <br /> 1. Heat the oven to 400°F. Grease a 9-inch square baking dish with a little oil. Bring a large pot of water to a boil and salt it. Put the stock with the bay leaves in a small saucepan over medium-low heat. When small bubbles appear along the sides, about 5 minutes later, turn off the heat and let stand.<br /> <br /> 2. Cook the cauliflower in the boiling water until very tender, 20 to 25 minutes. Scoop the cauliflower out of the water with a slotted spoon and transfer it to a blender or food processor. Add the pasta to the boiling water and cook until still somewhat chalky inside and not yet edible, about 5 minutes.<br /> <br /> 3. Remove the bay leaves from the stock. Carefully process the cauliflower with 2 cups of the stock, the 2 tablespoons oil, the cheese, mustard, nutmeg, and a sprinkling of salt and pepper. (You may have to work in batches.) If the sauce seems too thick, add the remaining 1⁄2 cup stock. Taste and adjust the seasoning. Pour the sauce over the pasta, toss, and spread the mixture evenly in the dish. (You can make the dish to this point, cover, and refrigerate for up to a day; return to room temperature before proceeding.)<br /> <br /> 4. Sprinkle the top with the Parmesan and bread crumbs if you’re using them. Bake until the pasta is bubbling and the crumbs turn brown, 15 to 20 minutes. Serve hot.<br /> <br /> Less Creamy Cauliflower Mac: Cut the cored head of cauliflower in half instead of into large pieces. In Step 2, cook only half of the cauliflower until it’s very tender, then transfer it to the blender or food processor as described. Chop the remaining half of the cauliflower into large pieces and add them to the boiling water along with the pasta. Proceed with the recipe.<br /> <br /> <b><u>Kale Salad: </u></b><br /> <br /> Start by taking the stem out of the kale leaves, and then julienning the leaves into strips. Meanwhile, slice a container of brussels sprouts pretty thin. Make the dressing: mix together one tbsp of dijon mustard, the juice of 1-1.5 lemons, salt and pepper. Whisk in about 1/4 cup of olive oil, or until the dressing has a nice consistency and flavor. At this point, you can dress the kale to let it macerate for a few minutes before serving. Cook the brussels sprouts: put a tablespoon of oil in a pan over medium-high heat. After a minute, add the brussels sprouts. Let them brown, untouched for about 2 minutes before stirring the pan. I think they take about 5 minutes to cook over all? Add hot brussels sprouts to the kale, shave parmesan, add extra dressing if necessary.<br /> <br /> <div style="text-align: center;"> Everything was amazing and it was such a lovely day.
