I formed about a 2 inch thick ring out of the dough and covered the outside with 1 tablespoon of oil and wrapped it in plastic wrap to rest for about 30 minutes. The girls were playing with little Brian while I did this :) </div> <div class="separator" style="clear: both; text-align: center;"> <br /></div> <div class="separator" style="clear: both; text-align: center;"> Then came the fun part. Once the dough had rested, Caroline and I (below) broke off pieces sizable enough to fit through the pasta maker and started making our sheets for the ravioli. You start at the highest level so your dough can easily pass through. Now before I begin with the recipe, let me tell you that when I told Brian Sr. we were having lasagna for dinner he was thrilled, when I told him it would have no tomato sauce or meat but rather butternut squash and lasagna, his reaction was completely skeptic. He claims to not like butternut squash, sweet potatoes and the like, but one bite of this lasagna and he was singing my praises and remarked, "you're killing it in the kitchen, this is amazing".<br /> <br /> <div class="separator" style="clear: both; In the bowl of an electric mixer fitted with the paddle attachment, beat sugar and butter together until light and fluffy, about 2 minutes. Add eggs, and beat until combined.
