Brian Sr. tasted it when he got home from work and remarked, "This blows any other cake you've ever made out of the water"!<br /><br />I highly recommend offering to bring the dessert at your next dinner party or luncheon and make this. </div> <div class="separator" style="clear: both; text-align: center;"> <br /></div> <div class="separator" style="clear: both; text-align: center;"> This recipe is adapted from Ina Garten's Honey Vanilla Pound Cake: </div> <div class="separator" style="clear: both; text-align: center;"> <br /></div> <div class="separator" style="clear: both; text-align: center;"> Here is what you need: </div> <div style="text-align: center;"> <br /></div> <div style="text-align: center;"> 1/2 pound (2 sticks) salted butter, at cool room temperature</div> <div style="text-align: center;"> 1 1/4 cups sugar</div> <div style="text-align: center;"> 4 extra-large eggs, at room temperature</div> <div style="text-align: center;"> 2 tablespoons honey</div> <div style="text-align: center;"> 2 teaspoons pure vanilla extract</div> <div style="text-align: center;"> 1 teaspoon grated lemon zest</div> <div style="text-align: center;"> 2 cups sifted cake flour </div> <div style="text-align: center;"> 1 teaspoon kosher salt</div> <div style="text-align: center;"> 1/2 teaspoon baking powder</div> <div style="text-align: center;"> 1 1/2 cups of fresh or frozen blueberries</div> <div style="text-align: center;"> <br /></div> <div style="text-align: center;"> Here is what you do:</div> <div style="text-align: center;"> <br /></div> <div style="text-align: center;"> Preheat the oven to 350 degrees. Grease the bottom of an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Line the bottom with parchment paper, then grease and flour the pan.</div> <div style="text-align: center;"> <br /></div> <div style="text-align: center;"> In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed for 3 to 4 minutes, until light. Meanwhile, put the eggs, honey, vanilla, and lemon zest in a glass measuring cup but do not combine. With the mixer on medium-low speed, add the egg mixture, one egg at a time, scraping down the bowl and allowing each egg to become incorporated before adding the next egg.</div> <div style="text-align: center;"> <br /></div> <div style="text-align: center;"> Sift together the flour, salt, and baking powder. With the mixer on low speed, add it slowly to the batter until just combined. Next add the blueberries. Finish mixing the batter with a rubber spatula and pour it into the prepared pan. Billy Joel's <i>Lullabye</i> is the<i> one</i> song that I could listen to a million times, and every time, no fail, it brings a tear to my eye. Over the years, I've memorized the words and sing them to little Brian almost every night to lull him to sleep, my little angel...<br /> <br /> I was inspired the other night to make a nursery print out of it and came up with this. I've made some simple changes to our usual side dishes and the new versions leave us so satisfied that we swear we'll never go back.<br /> <br /> One side dish that I loved to make were mashed potatoes. They are so satisfying and savory and go so well with certain meals like roasted chicken and meatloaf, it's hard to imagine a vegetable replacement. Enter cauliflower. With a knife take off all the heads, you can leave the stems on. This sounds like it might take some time but really, the heads all kind of fall apart as you're cutting them off the base. Boil them in water until they are soft enough to put a fork through with little effort. </div> <div class="separator" style="clear: both; text-align: center;"> <br /></div> <div class="separator" style="clear: both; text-align: center;"> In a food processor or blender, place your boiled cauliflower, a few heaping tablespoons of plain greek yogurt, a teaspoon of crushed garlic, freshly grated parmesan cheese (about a half a cup), and salt & pepper to taste. Blend it up until it reaches your desired consistency and you're done! </div> <div class="separator" style="clear: both; text-align: center;"> <br /></div> <div class="separator" style="clear: both; text-align: center;"> They are so yummy and have basically no fat except for the parmesan cheese, you MUST try! </div> <br /></div>

Braised Chicken with Tomato & Kale

<div dir="ltr" style="text-align: left;" trbidi="on"> Since the weather has gotten beyond cold, I've become pretty efficient at the grocery store and using what's in stock at the old homestead to cook our daily meals. Also, as of the NewYear, I'm trying to incorporate lots more fruits and veggies into our diet.<br /> <br /> Last night, I made some delicousness with bone-in chicken, tomatoes, onions and kale. Brian Sr. raved about it and asked I that I make it once per week. I prepared it over a half-hour long phone chat with bestie and little Brian hung out in his big boy high chair (meltdown at 31 minutes).<br /> <br /> Take your bone-in chicken pieces (thighs and breasts) and cover them with salt and pepper. If you have any other red seasonings in stock like red pepper flakes or smoked red pepper use that as well. Brown the chicken in a dutch oven with a little bit of olive oil on both sides for about 5 minutes. Once your chicken is browned, remove it from the pot and sauté chopped onion in the oil until it becomes translucent. Next add a can of diced tomatoes and 1 cup of dry white wine. Place your brown chicken back in the pot, put the lid on and roast in the oven at 425 degrees for about 30-40 minutes. Happy New Year!! I hope you all enjoyed celebrating the close of 2013 and welcoming in 2014 with your loved ones. We have been at my parents' home in Jupiter, Florida since Christmas and are not flying out until Tuesday because of the storm back in Connecticut. I was so bummed to learn we couldn't get out on our scheduled flight which was yesterday, sike!!!! The only flights they could offer us had a minimum of two connections which would be impossible with little baby B. <div> <br /></div> <div> We've all had such a great time though there were some hurdles in the beginning. I'm not gonna lie, travelling with little Brian was not the easiest. The day before we left the poor guy got hit with a cough.  He was miserable on the plane and couldn't get comfortable. We were that family with the crying baby -- brutal. Once we landed we sighed with relief and hoped his cough would go away with the warm air. The cough continued and a few days in, he started wheezing. I was terrified and called our pediatrician at home who told us we needed to get to a doctor or to the ER ASAP. We got him in to see a doctor right away and we started giving him nebulizer treatments to help open up his lungs so he could breathe easier. I had never heard of a nebulizer and I was distraught seeing my little guy hooked up to this machine which he had zero tolerance for. Never in a million years did I think his little cough would progress like that and I couldn't help but blame myself. I guess we all do that as moms but I had a very hard time accepting that he caught this from something I exposed him to. At any rate, he's doing much better now and we were given a few extra days to enjoy the Florida weather before heading home to the cold. I'm going to be committed, really committed, to exercising at least three times a week. Over the years, I've learned that exercise is so important for my well being, the emotional and mental trumping the physical benefits.
